Ingredients
- 750g frozen summer fruits(raspberries, blackberries, red and blackcurrants)
- 250g Caster sugar.
- 9 sheets leaf gelatine.
- 75g custard powder.
- 1.2lt milk.
- 1 ½ – 2 Madeira cakes.
- 4 tbsp sherry od cassis.
- 300-450ml double cream.
- 1 tsp vanilla extract.
- 2 tbsp icing sugar.
- 2 crushed amaretti biscuits.

Preparation
Step 1
Add 750g of the frozen summer fruits on a pan along with 200g of caster sugar. Then add 1l of water and heat it on low heat.
Step 2
Cook the mixture for 2 mins, then scoop out the mixture and add 150ml of juice. Then keep on cooking the mixture for 5 mins.
Step 3
During the 5 mins cook time, soak 9 leaves of gelatine in cold water. Then if you have a blender, strain the cooked fruit in a juice and sieve out the pulp and juice.
Step 4
From the gelatine remove the extra water, then add the hot fruit syrup, and then stir the mixture. Cool it, then keep it aside to chill and settle.
Step 5
The make a custard according to the instructions on the pack. From the 75g of custard powder, 1.2l of milk with 50g caster sugar, then make a thick custard. Cover the top with baking paper and keep it aside to cool.
Step 6
In a trifle bowl, add 1 ½ – 2 cubes of Madeira cakes. Then carefully spread the juice on the cake along with the berries. Then spread 4 tbsp of the sherry on top of it.
Step 7
Then pour over the thick custard on top of it, and spread evenly. Set aside to cool with skin, making it a wall between the jelly.
Step 8
After the custard is cooled down and set, the jelly is set as well. Evenly spread the jelly over the cool custard then cool the whole thing again. And it’s complete.
Step 9
Whip up about 300-450ml of double cream and 1tsp vanilla essence and also 2 tbsp of icing sugar. Then whip it until it forms a shape. Spread the whipped cream over the jelly as well. Scatter a few crushed amaretti biscuits on the whipped cream and it’s ready.
